Penn Palate: Penn Gastronomy Club President | 34th Street Magazine

Street: What is your ultimate dessert?
Shreyans Goenka: My ultimate dessert is an Indian dessert called Jalebi ? dough is pressed through a fine hole straight into hot oil in circular motions. The fried dough is then soaked in a sugar syrup flavored with saffron, cardamom and rose water. The result is a heavenly bite ? crunchy on the outside, melting on the inside with bursts of the heady flavors of the syrup.

Street: What is your favorite place to get dessert in Philly? Ice cream? Candy/chocolate?
SG: My all time favorite dessert in Philadelphia is the steamed fig pudding with goat cheese ice cream in Talula?s Garden. No words to describe how amazing it is. But I also love the macaroons in Miel Patisserie and the cakes at Metropolitan Bakery. I also love the champagne truffles at Teuscher.

Street: Do you bake or make your own desserts or candies?
SG: Yes, I bake a lot when I get the time. In fact, I have even completed the formal patisserie training course at the Restaurant School on Walnut Street. It?s hard to bake in college, so I usually bake at home.

Street: If so, what are your specialties?
SG: Sticky toffee pudding, lemon sabayon tart and cr?me br?l?e.

Street: Why does PGC hold a dessert competition instead of just a general cooking competition (what makes desserts special)?
SG: The dessert competition was special, as it was a collaboration with Sugar Philly Food Truck ? the winning dessert went on their menu) . There is no denying that desserts are special, but we never wanted to consciously limit ourselves to desserts and hope in the future to have other cooking competitions as well.

Street: What would your ultimate candy bar consist of?
SG: It would be rich dark chocolate flavored with spices like red chili, cardamon and cinnamon on a layer of buttery shortbread biscuits.

Street: What candy did you dread getting every Halloween?
SG: Never really celebrated Halloween till I came to college from India, but since then it has been the awful candy corn.

Street: You?re stuck on an island ? indefinitely ? and you can have just one type of candy. What do you pick?
SG: Chocolate truffles.

Street: M&M?s or Skittles?
SG: M&M?s.

Street: Snickers or Milky Way?
SG: Neither ? Twix is the best.

Street: Lifesavers or Jolly Ranchers?
SG: Lifesavers.

Street: Chocolate or Vanilla?
SG: Chocolate.

Street: Mounds or Almond Joy?
SG: Don?t like the artificial tastes in either.

Street: Ben & Jerry?s or Haagen Dazs?
SG: Haagen Dazs.

Street: Sprinkles or Capogiro?
SG: Capogiro.

Street: Cookies or brownies?
SG: Cookies.
