Good Afternoon and Happy Monday!
I am a bit tuckered out.? My day began at 4:15am!? I am not so sure I am up for?a 5:00am client because I am definitely not running on all cylinders at that time in the morning.? I had a busy docket with back to back clients until 10:00am.? I love being busy once again and the time just flies by.
I knew I would be busy, busy the first part of the day so decided to fuel up with a sandwich.?
I made a Sunbutter, Banana and Strawberry Nine Grain Sandwich
2 slices Great Harvest Nine Grain Bread
1 1/2 tbsp SunButter (sunflower butter)
1 banana, sliced
4 ripe strawberries, sliced
Delish.
Lunch was a beautiful Strawberry, Red Onion, Gorgonzola, Spinach Salad.
Strawberry, Red Onion, Gorgonzola, Spinach?Salad
2 cups spinach and arugula mix
1 cup strawberries, sliced
1/4 cup thinly sliced red onion
1 tbsp crumbled gorgonzola cheese
1 tbsp pistachio nuts
Dressed with 1 tsp Extra Virgin Olive Oil, 1 tbsp balsamic vinegar, 1 tbsp dijon mustard.
This is a fantastic summer salad.? Fresh Strawberries are the highlight of the dish but the Gorgonzola cheese adds a nice bite to the salad as well.? The?arugula provides a nice peppery bite that is?balanced out by the red onion.? ?? Yum!
Now sometimes you are just in the mood for some munchies and that was the case yesterday afternoon!

I love avocados so much but try to think of guac as green butter because even though avocados are the good fat I could eat a whole vat of guacamole and then the health benefits would no longer outweigh the overall?fat quantity.?
